Literally the BEST Pepper I’ve ever had!

Love Me Some Peppers!


Hey guys!

This summer I have been inspired by a lot of people I follow on Instagram.
One person, @cookinwithmama, put up a picture of Mediterranean stuffed peppers. It looked great! So I took that concept and ran with it.

I came up with a version of Taco Stuffed Peppers. So flipping yummy!

Here is the recipe and how I tackled making healthy food! You know …that one time.


  • 4 bell peppers
  • quinoa
  • lime juice
  • salsa
  • 1 lb ground turkey *really only needed half this much*
  • 1 packet of reduced sodium El Paso taco seasoningpreheat call out box
  • chopped garlic
  • chopped onion (optional)
  • chopped sweet peppers (optional)
  • low-fat Mexican blend shredded cheese


This recipe made enough for 4 people… 1 pepper per person!! 😉

First thing you want to do is preheat your oven to 325350 degrees. Thank goodness I have finally gotten myself into this habit.

Ok next get some water boiling to cook your quinoa and steam your peppers in. *2 different pots*

Grab your bell peppers and cut their stems, seeds, and veins out.
*I used red, orange and yellow, but green peppers would work just the same*
Slice a circle around the stem and take that off. Then just use your hands and some water to get the rest out.
Put your peppers into the steamer pot.
*If they don’t want to stand just slice a bit off of the bottom to make it a flat surface*



I decided I wanted to do 4 peppers after I had already steamed 3 and turned that burner off.
So to get another pepper up to speed I used a microwave trick I learned in college.

Cut the stem off and clean it out. Then submerge the pepper into a cup of water. I always make sure it covers about 2/3rds of whatever I am steaming.
Microwave for 1 minute or so.

You want to steam your peppers until they are soft but not mushy IN BOTH CASES.


While the peppers are steaming, make your quinoa and ground turkey.
I kinda just slapped the turkey into a hot skillet with a tiny bit of vegetable oil and garlic. I added the entire pack of taco seasoning and splashed in some lime juice as I saw necessary.

After the quinoa had absorbed all of the water in the pot I added in a bunch of salsa, sweet peppers, extra onion, and some garlic.

Once the peppers are done steaming put them into a baking tin peppersncheeselined with vegetable oil and stuff them. I alternated between adding meat and then quinoa in layers, packing it in until the peppers were full.

I topped it off with shredded cheese to make a crust, and put them into the oven for 15 minutes. *Or until your cheese is good and melted.*

Take them out, slice ‘em in half and enjoy!
Actually you might want to let it cool a bit… but whatever floats your boat!

So yeah they were really really delicious.
My sister even ate one and she pretty much hates anything healthy. I counted that as a massive win!
